There are many different varieties of pumpkins, each as healthy as they are tasty. Low in kilojoules, pumpkins are an excellent source of vitamin C and carotene, which is converted to vitamin A in the body. They also provide dietary fiber, potassium and some iron. For best pumpkin uses  look for pumpkins with a hard, thick skin that are heavy for their size. If precut, select flesh that is a bright yellow-orange without any discolouration. Store whole pumpkins in a cool, dark, well-ventilated place for up to two months. Once cut, remove the seeds, cover in plastic wrap and store in the fridge for up to a week.
