Choosing Kitchen Knives

If you watched Top Chef you saw one of the contestants struggle to slice an onion with a dull knife during a timed contest. It was awful to watch. If you already own one of the best kitchen knives you’re going to need to keep it sharp. You can sharpen it yourself or you can have it professionally sharpened. Professional knife sharpening is recommended twice a year.
